Pasta with Zucchini Sauce

1 T olive oil
1 clove garlic, minced
1 medium onion, chopped
2 medium zucchini, diced
1 can crushed tomatoes (16 oz.)
2 bay leaves
1/2 t salt
1 T Italian seasoning (or 1 t each oregano, thyme, rosemary)
8 oz. spaghetti or other pasta, cooked according to package directions
2 T grated Parmesan cheese

Heat olive oil over medium heat in a sauce pan. Add garlic, onion, and zucchini and saute for 2-3 minutes. Add tomatoes, bay leaves, salt, and Italian seasoning. Cover and simmer over low heat 15 minutes. Remove cover and simmer another 10 minutes until sauce begins to thicken. Discard bay leaves. While sauce is cooking, cook pasta according to package directions. Drain and serve pasta with zucchini sauce and Parmesan.

Yield: 4 servings
